Fish bones and trimmings deepen the broth before cooked yellow croaker is placed over the noodles. Shanghai’s coastal supply and established noodle shops made the fish a natural topping, but kitchens differ in whether they use large or small yellow croaker. They also differ in how completely they remove the fine bones.
